Carbohydrates are not essential. The body can manufacture any carb it requires. Only proteins and fats are required. No, carbs are not essential for maximum performance and are a very weak form of energy as fats are far better than carbs as an energy source (fats have 9 calories/gram, carbs 4c/gm).. No, the more energy you use the more fats and proteins you should eat as fat (as mentioned) should be the primary source of energy and proteins allow the body repair itself. The only good carbs are the complex carbs found in vegetables and starches such as coloured root vegies such as sweet potatoes/yams/etc.Proteins and Carbohydrates are essential along with micro-nutrients (vitamins and minerals).
Breads are very bad for you and you should limit them or preferably not eat them. They are instantly metabolised into glucose, cause inflammation in the body (Crohn's disease, irritable bowel syndrome, gluten sensitivities, among a host of issues). Inflammation from breads is the worst since many serious ailments (heart disaease, etc) are a direct result of inflammation.Had a bunch of conversations with low-carb people.. It depends on the bread, and the overall context of the diet in which it's being consumed.
Bread can be bad for you under certain circumstances - if it's laden with poisons (pesticides such as glyphosate - used in any non-organic bread), if the flour is refined rather than whole grains that are sprouted or fermented (in which case it's essentially just like sugar, devoid of nutrients and inflammatory), or if you have blood sugar issues or any intolerance to any of the components of the bread (gluten, or yeast, or a wheat allergy, for example).
Bread can be good for you under certain circumstances - if it's free of poisons (i.e. organic to make sure of this), uses whole grains properly prepared with extensive traditional preparation methods (sprouting and/or fermenting them), you're not intolerant to them, and they're eaten in the context of an overall healthy diet, and you don't have blood sugar issues or any other reason why they'd affect you personally negatively.
